Turkey Parmesan Meatballs

Here is an easy and yummy low carb and gluten free recipe for turkey parm meatballs.

Turkey Parmesan MeatballsIngredients:

1lb of organic ground turkey

1 cup of gluten free or almond flour

2 eggs

1/2 cup of fresh Parmesan-Reggiano cheese, grated

1/2 cup of organic full fat yogurt

1/4 cup of diced onion

1 cup of carrots

3-4 cloves of garlic (diced)

1/4 tsp of dried oregano (can use more if using fresh)

1/4 tsp of dried basil (can use more if using fresh)

1 Tbsp of fresh minced parsley

1 tsp of Himalayan salt

1/2 tsp of black pepper

Marinara Sauce and Organic Mozzarella Cheese for Garnish.


Preheat the oven to 350 degrees.

Blend to a puree (I used my Vitamix)  the carrots, yogurt, eggs, onions, garlic, parmesan cheese, and gluten free flour.  Next add the spices into the Vitamix and blended for another 30 seconds.

In a large bowl, transfer the above from the blender and pour over the ground turkey.  Mix (I used my hands) until the meat is combined with the puree mixture.

Roll the mixture into balls (Your choice on size) and place on a cookie sheet.  Bake for 20 minutes and turn once.

Garnish the meatballs with marinara sauce and a slice of organic mozzarella cheese.  I chose to also add a bed of sautéed green beans!
